Expansion into event catering introduced a mix of casual staff, fixed-term hires, and third-party labour providers. PAYE remittances were inconsistent across states where events were held, and some senior chefs were paid through related-party companies.

We mapped the workforce by location, tested contracts against employee vs self-employed indicators, and quantified under-remitted PAYE and related penalties. A standard payroll calendar was implemented with state-specific remittance trackers.

HR and finance received practical guidance on documenting benefits in kind and on-boarding checklists for new outlets. Monthly tax packs are now reviewed by our team before submission to the relevant authorities.
